What I Ate (Highlights) #6

I'm doing something different his week, I'm giving you highlights of my cooking from the whole week.  These are the foods I made that I am particularly proud of.  I also learned a lot about photographing food.  I like my camera a while lot more now that I have more control (we still have our disagreements, but it is getting better).

Without further ado, here are the HIGHLIGHTS!!!

1. Chicken Soup:
It takes hours to make but it is so good and so good for you.  This is my step-mother's recipe, she has taught me a lot about cooking.

2. Strawberry Tart

I had some leftover filo dough from a chicken pot pie (no good shots of that one) and made this.  Jeff and I shared it and it was devine.  This was so easy to do.


3. Sushi (no fish)


4. Strawberry, Yogurt and Granola Parfait (it is not exactly a parfait, but close)
I got the idea from a desert at Ruby Tuesday.  This was also quite easy to make.  (Can you tell I love deserts?)

There you have meals that have made me happy this week.  If you did not notice, I just love experimenting with my deserts.  The parfait was a great success, and very low calorie.  In our county restaurants have to list their calorie count for each meal, and this desert was the lowest on their list of deserts (way lower than our usual Tiramisu).

If anyone wants any recipes just let me know.  I'm happy to give them to you.

What I ate Wednesday #5



Ok I have to admit, I din't eat very much today, but it is not my fault...I slept late, very late.  I work up at 1 pm. 

You see, I'm in Graduate School (yes that needs to be capitalized) and my sleeping cycles are all out of whack.  I work late at night and sleep into the day.  Often I'm just falling asleep when my husband's alarm goes off at 4 am.  (I'm also just a night owl) But I digress. 

Here is what I ate:

Breakfast: (or lunch for all you normal people)

Poached eggs on toast.  I love poached eggs and was so proud of myself when I learned how to cook them. (From Julia Child of course)
 
Lunch: (actually I didn't have lunch, because by the time I had breakfast and finished some work on my thesis I had to run to yoga)

Snack:  When I got home from yoga I was so hungry I had to have a quick snack, even though the ravioli only takes 4 minutes to cook.  
It is already almost finished here :)
 
Dinner: Jeff Made dinner so it had to be simple (he's new at cooking).  I had him pick up some ravioli at this local shop that makes it fresh. (So good, and takes 4 min to cook).
I had trouble getting a good shot of it.
and...salad. 
I found a new setting on my camera to lighten it up, what do you think?
Dessert: I had some leftover cookies (rainbow cookies I love them) and tea.  I was so preoccupied with my thesis I didn't get a photo. (Sorry)


That's what I ate today (so far, if I'm until 4 again I may have another snack before midnight).

What I ate Wednesday #4

Today was a crazy day. I had to go back to Kingston again this week, but managed to remember to eat this time.

Breakfast:
After reading about Maria's breakfast last week I was inspired to put peanut butter and coconut on my hot quinoa. I have been waiting to try quinoa instead of oatmeal (I'm so tired of oatmeal). Now this is one of my favorite breakfasts (although now I want to add Nutella too).  It is really filling.

Lunch:
For lunch I went to my local health food store for a quick Fakin' Bacon, lettuce, and tomato.  Yum.  This is my favorite lunch in Kingston.  I even found a callorie free fruit soda.  Score.


Dinner:
My Jeff was not feeling well when I got home, so I just made steamed veggies and white rice.  I have been sick so many times in India so I know this is the best meal to make because it will stay down.  (My poor hubby)
I like to have mango pickle (that stuff in the lower right hand corner) and yogurt with my veggies.
No dessert.  But... I'm making some trail mix (thanks Jennifer) for my party so there might be some snacking.

Bad Pictures of Good Food

Jennifer from Peas and Crayons is having a "What I ate on Wednesday" link party for bloggers.  In honor of her party I will  now tell you what I ate today.

For breakfast I had Honey Nut Cheerios (yum).
I have such nice light in the day time.
Then I went into Kingston, which is kind of a big deal for this little country girl.  Trips to Kingston (a twenty mile drive) are usually reserved for the weekend, but I had some gift cards I wanted to use.

Somehow, besides a cappuccino (I forgot to photograph), I didn't eat all day.

When I got home at 5:15 I was so hungry I ate a yogurt ...

... and a peanut butter and honey sandwich.  I ate the sandwich and yogurt before I got a shot.  In fact, I have been particularly bad at taking pictures of my food all day besides breakfast.  (Sorry about that. I'm not doing very well with this whole plan.)

For dinner my hubby and I had Pork Medallions with an apricot sauce and pureed cauliflower.  Here is a shot of the leftovers (see what I mean about not being good about taking pictures?)

Now I'm eating my last lemon square and some tea. 
(Photography is not my strong suit, I just don't have the patients to set up the shot.  I used to work for a professional photographer and I saw that she spent most of her time on lighting and framing the photo.  I have trouble doing this.  Especially with food, I just want to eat it!)

That is what I ate today (for the most part).  Maybe next week I will be more patient with the photography end of it.
